Beef Inspection is performed by the United States Department of Agriculture (USDA) – Beef Inspection is Mandatory

 

Mark of Federal Inspection – Stamped directly on all primal areas of the carcass.

Information includes U.S. INSP’D & P’S’D (US inspected and Passed for Wholesomeness), and the Establishment #. The Mark of Federal Inspection will also appear on the packaging of each individual piece of beef.

 

Establishment # - Identifies the plant where the product was LAST processed or further  processed. Every plant that is under Federal Inspection must have its own Est. #.

 

Quality Grading through USDA – Voluntary since 1927

                 USDA Prime      USDA Choice       USDA Select

 

No-Roll Beef – Any USDA inspected product that either; 1) does not grade to the minimum level of USDA Select, or 2) does not go through the grading process.

                 Standard  Commercial  Utility  Cutter  Canner

 

Maturity – 95% of graded beef is of “A” maturity (9-30 mos. old at time of harvest).

 

Yield Grading – Available since 1965, identifies “Cutability” of carcass. Grading scale ranges from Yield Grade 1 through Yield Grade 5. Yield Grade 1 identifies a carcass as having the most usable lean, while Yield Grade 5 will produce the least usable lean.

In December 2000, A.M. Briggs went through an ownership change to become part of the Sysco Corporation, but our mission and focus has not changed.  We are committed to providing our customers with the highest quality products and superior customer service.
